This wine was made from grapes grown on the north facing slopes
of our vineyard overlooking the Belubula River. Only the best fruit
was selected for pressing for this wine as without suphur, defects
cannot be hidden.
It was bottled six months after harvest and before any sulphur
[preservative 220] was added.
Some natural sulphur resulting from the fermentation
process may be discovered but if present it is at very low
levels.
It is drinking well now and will keep well through 2009 as it is
bottled under screw cap, but it is not recommended for long term
cellaring.
Lightweight bottles have been used in order to reduce our carbon
footprint without diminishing the benefits of glass packaging
Total Sulphur [Preservative 220] at bottling was less than
10ppm
